Mocha Almond Fudge Avocado Cake

Mocha Almond Fudge Avocado Cake, Vegan Feast Catering, CC

[This recipe contains many healthy ingredients, but also a pound of cake flour and a pound of powdered sugar. Enjoy as an occasional treat, in moderation. It’s also a great way to introduce ‘health foods’ like avocado and almonds to others. – Editor] 

In a mixer combine:

  • 1/8 cup vegetable oil
  • 1/4 cup avocado
  • 1 cup cake flour
  • 5 tbsp cocoa powder
  • Pinch of salt
  • 1 tsp baking powder
  • 3/4 cup raw sugar or agave syrup
  • 1 cup coconut milk
  • 1 tsp vanilla
  • 1/4 cup ground almonds or almond meal
  • 1 tbsp apple cider vinegar

Pour into a greased pan of choice.

Pop into oven at 350 degrees and bake 30-40 minutes depending upon size of pan. Edges will pull back when done.

Melt 1 cup sweetened chocolate – cut into batter 15 minutes into baking.

Avocado buttercream:

  • 1 avocado
  • 1 # powdered sugar
  • 1 tsp vanilla
  • 4 tsp lemon juice

Blend and whip until the icing is the consistency you like.

Ice cake and garnish with toasted almonds.

Yields 1 cake or 4 small bundts.
